The host did not speak to us, just looked at me until I said my name and reservation time. Then she lead us in silence to our table through the beautiful bar and restaurant - stunning decor. Maybe the awkward no speaking thing is part of it? We had an excellent (and verbal!) waiter, an attendant for water, cutlery & dishes, and a food runner. They took great care of us. Exceptional service. We had two apps, the Mediterranean meze (trio of hummus, feta & tzatziki spears with fresh baked pita) and tomatoes Mykonos. Absolutely delicious. Two entrees: the Faroe Island salmon and lemon oregano chicken. Fantastic flavors, amazing presentation. We couldn't believe the thoughtful and creative dishes, in a casino lobby restaurant!! Highly recommend.

Even though I'd seen all the poor reviews, I had a feeling that the issues were more about a new restaurant working out the kinks than the actual food or service, so I decided on Cathedrale for a date night last month (May '24). Much like anything in else in life, I'm glad I ignored the opinions of others and listened to my gut. We went in without a reservation and snagged two seats at the bar. Our bartender (whose name I can't recall, please forgive me for being so distracted with the amazing food and drinks) was a delight - he gave us the perfect amount of attentiveness and he expertly adjusted the cocktails to my liking. (I had the De Peche Mode, I believe.) We ordered the tartare and I was taken aback by how good it was. One could argue that it's because my expectations were lowered based on what I'd read,..but when it comes to tartare, I am unforgiving, not that there was much to forgive! It wasn't overly oily, creamy, or vinegary; call me Goldilocks, because it was JUST RIGHT. (If I were to make a tiny adjustment, it's that I would have loved some bread over the chips served in/with it. Even that is hard to argue, because the presentation was gorgeous and honestly, I totally get why they used chips instead of bread (see pic). If you are a mushroom person, the mushroom appie is an absolute must. We had a few other things and it was all top notch. Ignore the poor reviews, come for the tartare, stay for the bar.

Sometimes when you think about the places you've visited and the experiences you've had memories pop out like flavors or colors instead of whole film sequences. The flickering of fireworks in the night sky or the sway of distant music in hushed lighting come to mind. So it's no surprise when I think of Cathédrale it is the smell of citrus, the overture of private conversations, and the taste of succulent meat melting in my mouth. This is one place worth visiting in Las Vegas. Ambience - "Take me somewhere special" Located near the entrance of Aria you'll see a tunnel taking you away from the busy casino floor of the hotel. As the dark lighting mixed with art leads you to the restaurant the noise of the casino fades away to make way for the colorful ambience of Cathédrale. When you reach the host's table you are standing in a stunning space featuring a live DJ bumping beats while a gorgeous bar is located to the left. Many might mistake this space to be the main restaurant floor because of its opulence and vibes but it is just for the bar. For some, this space would be enough for you to enjoy the restaurant to its fullest; however, if you go to the actual dining room floor you'll see above you ornate designs on the ceiling, vases of flowers at the dining booths, and large wine cellars showcasing an extensive range of wines. It all gives an intimate, yet open space for diners to enjoy. Even the use of design for their menu and napkins are something to appreciate. There was a lot of care taken into creating a cohesive visual experience and it shows. Food - "Delight me, please me, change my point of view" To simplify what the menu would fall under, you can say it is Americana. The use of meats like chicken, lamb, and beef combined with vegetables to create their dishes. But the ingredients are like notes in a nocturne: it's how they're played which makes them a masterpiece. In this sense, Cathédrale is a philharmonic awaiting to rise to the expectations and crescendo your tastes to a forte of culinary delights. Let's start from the beginning. From the get go you are served a house milk bread. The exterior is golden whilst the inside is bouncy to the bite. Paired with a sesame honey butter it makes the whole thing sweet, savory, and nutty. Sensational. For appetizers we started with far too many dishes for two people but they were all worth it. The wagyu steak tartare was incredible. Delicate, but rich in flavor it paired well with their home made chips. If you like olives, you'll love the tapenade it's served with. Their Brussels sprout salad was the bright note needed to added a different tone to the meal. The sweet, yet tartness of the green apples paired well with the Brussels sprouts and were a fantastic juxtaposition to the fattiness from the bacon mixed with it. And perhaps my favorite starter was the grilled hen of the woods mushrooms. Drizzle this with lemon and mix it with the basil pesto underneath it and you get an unmatched umami flavor. It was such a unique take on these ingredients. For our mains we ordered their rack of lamb which was cooked to perfection. Not too gamey and the endives it was served with gave a nice change in textures to the melt-in-your-mouth bites of lamb. We also ordered their 14oz Entrecôte au Poivre - essentially a steak frites with an "escargot" butter. It is decadent and every bite reiterates this statement. By the time I got halfway I was glistening from the sauces and wanted to stop eating. But momma didn't raise a quitter so I had to keep going. Everything was just so damn good. Endings We all know Vegas has phenomenal food. People all over the world come here and their expectations for food are high. Though it would be easy to settle in with standard fair with a little glitz and glamour to a space Cathédrale decided to do more with what it got. From sensual atmosphere to its mastery of ingredients this experience will be one that'll last for a long time.

Nice, intomate place to have a date... Food was good, service was great. We had a great time there. Will be back for sure

4.5 stars We made a reservation for 5:30 and people didn't start coming in until closer to 6:30. The ambiance and decor really made the place. The wine list was quite extensive and our server was top notch. The bread with the sesame butter was amazing. We split several dishes among the table each one more exquisite than the next and were quite the portion: the French omelette topped with potato chips and caviar (it was quite rich), the truffle fettucine pasta, and the filet medium. 2024 #22

We were staying in the Aria hotel so it made sense to check out one of the many dining options Aria has to offer. The interior is gorgeous. The bar area is lovely and the ceilings were something to admire Started with steak tartare, and for my main course I went with the lobster rigatoni. Each bite was delicious and even though it's hard to see it with the sauce, there's was plenty of lobster. The table are a little close together but the acoustics of the dining area helped in not get so loud. Unfortunately they were out of their main ingredient for their version of the espresso martini (el tamborito), but our waiter did a nice job explaining other alternatives that would be just as good

Came here on the last night of our girls weekend trip. A nice way to ring in my sis's birthday. I loved the ambiance! Give me cozy, low lighting any day! We were bummed that the salt baked sea bass was sold out, the entrees were good, just not up to the mark I'd expect for the price or the class of restaurant. The Branzino actually had a few bones in it which was not a pleasant experience, however our waiter and manager made up for it with the complimentary Lemon dessert which was sublime!

My wife and I had been looking forward to trying Cathedrale, the interior looked beautiful and the menu interesting. We made a reservation for 8:00 PM on Saturday and it took about 30 minutes to get seated. Much longer than you should have to expect at a high end restaurant. On the positive side, we were comped two cocktails for our troubles. The restaurant was indeed nice inside, but didn't quite live up to the pictures. They tried to make up for it with loud music better suited for a night club (maybe we're just too old). All the tables seem configured for 5 people so my wife and I shared a booth that was too big. The server was friendly and professional, so no issue there. We ordered the following: Wagyu tartar and burrata for starters. Both were quite good if not exceptional (maybe a little too much sauce on the tartar). For mains we ordered the Ribeye and the Black Truffle Fettuccine. The steak was really just OK. The "verte" sauce was so little the waiter had to point it out to me and frankly, I still couldn't taste it when paired with the meat. The steak was cooked fine, but was a little tough (how do you mess up a ribeye?) and really just didn't have a great flavor. It was also served on a dish that was too small, making it crowded. The bright spot, the roasted leek, it was amazing. The Fettuccine was cooked perfectly and the layer of shaved black truffle was just what my wife was hoping for. We also got sides of spinach and fries. The spinach was good, and definitely fresh, but lacked something, maybe salt? The fries tasted great, but were wilted. The cocktails were just OK. Overall I'd say that for $330 we could have gotten a much better meal in many other Vegas restaurants. If you're looking more for a party night than great food, this might be the place for you. Like STK, only STK has better steak. I struggled with 4 stars, it's probably closer to 3.5. Unfortunately, we likely won't be back.
